Chia Seed Pudding (Plant Based, No Sugar, No Oil)

Chia seeds must be soaked before being eaten. If you want the full benefit, you'll need to grind them first, then soak. I love the bubbly texture, so I leave them whole for this recipe, but try both and see what you prefer!

Plant Based Chocolate Breakfast Cookies Raw and Baked in a Yellow Dish
Chia Seed Pudding in a Clear Wine Glass with Raspberries and Sliced Bananas

Ingredients


  • 1/4 cup chia seeds

  • 1 cup unsweetened plant milk

  • 1 teaspoon vanilla

  • 1 tablespoon date syrup

  • Fruit and berries of choice


Instructions

  1. Whisk chia seeds, milk, vanilla, and date syrup in a medium sized bowl.

  2. Refrigerate for at least an hour (stirring occasionally).

  3. Layer with your favorite berries and/or slices of fruit.

    Recommendations: bananas, mango, peaches, blueberries, raspberries, . . .
