Chocolate Breakfast Cookies (Plant Based, No Sugar, No Oil, Raw or Baked)

These plant based chocolate breakfast cookies can be eaten raw or baked. They contain no refined sugar and no oil. A sweet treat that can be eaten as breakfast or a filling snack because it is filled with nourishing ingredients and has a glorious texture and a gorgeous flavor.

Ingredients


  • 1 cup rolled oats

  • 1 cup Medjool dates, softened

  • 1 cup raw walnuts

  • 1 cup black beans, drained

  • ¼ cup unsweetened cocoa powder

  • Optional: date sweetened chocolate chips

Instructions

  1. Microwave pitted dates for 30 seconds or soak for 5 minutes in hot water.

  2. In a food processor, add everything except oats. Blend until crumbly.

  3. Add oats and combine well. Mixture should be a thick dough.

  4. Prepare* raw or baked:

  5. To eat raw, roll into 1-inch balls and enjoy!

  6. For baked treat, shape into cookie or bar and bake at 350 degrees for 15 minutes on a parchment lined baking sheet. Allow to cool slightly and enjoy!

 

*Refrigerate dough for one hour and/or wet hands to prevent sticking while forming.
